Creamy pasta salad....

Ingredients

• 500gm elbow pasta/macaroni
• 1 cup vegan mayonnaise (Sunflower mayonnaise)
• Juice of 2 lemons
• Fresh pepper
• 1 cup pitted kalamata olives, chopped
• 1/2 cup semi-sun dried tomatoes (not in oil)
• 1 cup fresh basil, torn
• 1 cup fresh parsley, chopped

Instructions

1. Cook pasta and drain
2. Rinse in cold water (this prevents sticking)
3. Whisk the mayo, lemon juice and pepper together
4. Add the olives, semi-sun dried tomatoes, basil and parsley and gently mix
5. Add the dressing to the pasta and refrigerate for 2 hours
