  • Yield: Serves 4

Ingredients

Instructions

  1. Saute the onion and garlic until translucent
  2. Add the potatoes, diced tomatoes and water- bring to a boil, then reduce to a simmer
  3. Cook for 15 minutes, or until potatoes are ALMOST tender
  4. Add kidney beans, cumin, chilli flakes and tomato paste
  5. Cook for a further 5 minutes, stirring well to incorporate the spices
  6. Turn off the heat and add the spinach and coriander, leaving to wilt for a minute
  7. Serve with vegetables, rice, pasta or with some fresh crusty bread
