Potato and cauliflower samosas

  1. In a pan, saute onions and cauliflower in the safflower oil
  2. Add the spices and water, and slowly simmer until soft (you may need to add more water-a tbsp at a time)
  3. Add the potatoes, and boil for 15-20 minutes until soft
  4. Pre-heat oven to 180C
  5. Lightly mash the potato and cauliflower
  6. Using a cookie cutter, cut the puff pastry into circles, add a tsp of the mix, fold and crimp edges
  7. Do this until the mix is finished
  8. Lightly brush each samosa with some rice milk and bake for 15 minutes, turn and bake for another 5 minutes
  9. Serve with Tofutti sour cream and sweet chilli sauce
