  1. Preheat oven to 180ºC
  2. Lightly toss the vegetables in the safflower oil and bake for 45-60 minutes, until soft but not falling apart
  3. Whisk the mustard, olive oil and lemon together
  4. Stack the roasted vegetables on a bed of baby spinach leaves
  5. Lightly crush the walnuts in your hands and sprinkle around the salad
  6. Top with the goji berries and drizzle with the mustard dressing
  7. Serve immediately
