  1. Bring a pot of water to boil
  2. Cook noodles for 8-10 minutes, then drain and rinse under cool water; set aside
  3. Blend or process sauce ingredients together until smooth
  4. Toss the noodles with the vegetables, then drizzle with sauce and toss gently
  5. Top with coriander, spring onions and sesame seeds
  6. Can be served hot, cold or at room temperature!
